We eat a lot of eggs. When I say a lot, I mean about 3 dozen a week. It’s crazy how much I love them too. We eat them 99% of the time for breakfast and I wake up craving them! On day 3 we had scrambled eggs with red onion and red pepper and of course black coffee. I can probably just say ditto on the breakfast for everyday, but I’ll write it down on the slight chance we change it up with some almond banana pancakes.

Lunch was a dinner sized plate full of mixed greens, red onion, tomato, and red cabbage with a side of salmon salad made with homemade mayo. If you are scared to make homemade mayo, you definitely need to try this recipe. It is SO easy. The only thing it requires is a little patience, which is hard for me, but if I can do it I know you can. I get the Bear & Wolf brand at Costco which come with 6 cans for about $11.

For dinner, I had some chicken thighs that I wanted to do something with so I looked up a recipe on my favorite primal site, marksdailyapple.com and found the best Spicy Buffalo Chicken recipe. I paired it with veggies to dip in homemade ranch where I used my homemade mayonnaise. This was De-licious. I would use a little less almond or coconut milk if you want it thicker. I also had a side of sauteed okra in coconut oil with a little sea salt, pepper, and garlic powder.

One thing that I have come to love is to have afternoon tea. It sounds so proper, but it gives me something to look forward to and helps me sit down and relax when Emma is taking her afternoon nap. I drink a cup of hot green tea (right now I have Trader Joe’s Organic) with a splash of 100% pomegranate juice to sweeten.
